Why Our Beef?
We raise pure bred Black Angus Beef.  Unlike meat from the commercial market, our cattle are raised on pasture.  From the day they are born to the day they go to the butcher, they live happily on grass.  They are fed a small ration of grain daily for added flavor and marbling in the meat.  No steroids or antibiotics will be given to them while they are on our ranch. Minimally processed, our meat contains no preservatives and additives.  All that adds up to delicious beef for your dinner table!

How Big is a Side of Beef?
Just as each calf is different, each side of beef is too.  However, we can figure an average based on the calf weighing between 1,000 to 1,200 pounds.  This size calf will yeild between 175 to 225 pounds of beef per side.  That is about what an average family of four can eat in a year.

A typical side of beef will have these:
14 t-bone steaks
8 sirloin steaks
2 sirloin tip roasts
8 pkg. of stew beef
4 pkg. of soup bones
14 ribeye steaks
8 round steaks
6 chuck roasts
2 rump roasts
4 pkg of short ribs
80-100 lbs of ground beef


How is it cut?
Your side of beef will be custom cut to your specifications.  Do you like your steaks thicker or ground beef leaner?  No problem.  The butcher can take care of that for you.  Our sides will include but are not limited to sirloin steaks, t-bone steaks, roasts (rump, arm, pike's peak), brisket, flank steak, ribs, round steak, and ground beef.  And if there is a cut that you don't want, that's no problem either.  Those can be ground into delicious ground beef too.  That way, you only get what you want the way you want it.

How Much $?
Each side of beef is $900.
If you want a whole beef (2 sides), you pay $1750.
Or if you only want a quarter of a beef (half a side), you pay $475.
Meat processing is an additional fee charged by the butcher and done by weight.  It will run approximately $225 for a side of beef.

Beef will finish out in April/May.  We are taking reservations now.  Deposits of $100 secure your 1/2 beef.  Not ready to commit to buy?  Get on the call list by sending us an email.  We will let you know if there are some available at butcher time.
